Broccoli Stilton Soup with 3 Ingredients?

For Broccoli Stilton Soup it’s simple. The three ingredients you need are vegetable stock, either homemade or made with a gluten free stock cube, a head of broccoli and Stilton or other strong blue cheese. Simple rough chop the broccoli, including the stalk, into small pieces to speed up the cooking time. Add the broccoli to a large saucepan with the stock and simmer until tender. Add the Stilton and blend with a stick blender until smooth. If you prefer to use a blender wait for the mixture to cool and blend in batches.

Broccoli Stilton Soup
- 1 L Vegetable stock Gluten free
- 500 G Broccoli, chopped
- 200 G Stilton, chopped
- In a large saucepan bring the stock to a boil with the broccoli and simmer until tender.
- Blend the mixture with a stick blender and then stir in the cheese until it melts.
- Check the seasoning and serve.
