Halloween Jelly Eyeballs are an easy Halloween dessert for kids and adults with lychees and blueberries in jelly and topped with whipped cream.

- 135 g sugar free strawberry jelly 1 pack
- 24 blueberries
- 567 g can lychees 24 lychees
- 150 ml double cream heavy or whipping
- 1 drop red food colouring
Drain the lychees and place a blueberry in each one.
Divide the stuffed lychees between 4 glasses or containers with the eyes facing out.
Make up the jelly as per the pack instructions and pour over the fruit.
Chill for 2 to 3 hours until set.
Add the cream to a bowl and add 1 drop of red food colouring.
Whisk the cream until stiff then pipe onto the jelly with a small round nozzle.
