Moules au Chorizo
Moules au Chorizo or mussels with a creamy Chorizo sauce. Whilst the mussels are cooking this easy sauce can be ready for pouring over.
- 1 kg of cooked mussels
- 125 g diced Chorizo
- 400 ml double cream
- 2 cloves of garlic crushed
- 1 onion finely chopped or 2 shallots
- Freshly ground black pepper

Put the onion and chorizo in a frying pan and heat until the onion has softened.
Add the garlic for a minute and then turn the heat down.
Add the cream and black pepper and heat gently until the sauce is pink.
Place the mussels in a serving dish and pour over the sauce.
Enjoy with plenty of crusty bread and a salad.
