Chicken Satay

Ingredients
  

  • 4 chicken breasts
  • 4 pieces of fresh or tinned pineapple

For the marinade

  • 2 long red chillies
  • 2 cm piece of ginger
  • 4 garlic cloves
  • 1 teaspoon turmeric
  • 2 tablespoon garam masala
  • 1 tablespoon fish sauce
  • 1 teaspoon oil
  • juice of one lime

For the sauce

  • 200 g of crunchy peanut butter
  • 400 ml can of coconut milk
  • 4 tablespoon sweet chilli sauce
  • 1 chopped red chilli

To serve

  • 1 lime quartered
  • 2 tablespoon chopped coriander
  • 1 tablespoon soy sauce

Instructions
 

For the marinade

  • Rough chop the chilli, ginger and garlic and place in a small food processor with the remaining ingredients until it forms a paste.
  • Cut the chicken into bite-sized pieces and combine with the marinade.
  • Leave the chicken in the fridge for at least 30 minutes.

For the sauce

  • Combine all the ingredients in a saucepan and bring slowly to the boil.
  • Pour into individual serving bowls.

Method

  • Thread the chicken onto skewers and grill for about 10 minutes, turning regularly.
  • Grill the pineapple for a minute or so each side.
  • Serve the chicken with the sauce, pineapple, lime and the coriander scattered over.

Notes

Depending on how hot you like it you can remove the seeds from the chillies. Ideally try the chilli first!
