Lemon and Pepper Crusted Salmon

A quick and easy recipe of lemon and pepper crusted salmon

Ingredients
  

  • 4 150 g salmon fillets
  • 2 slices of wholemeal bread
  • 3 tablespoon olive oil
  • zest and juice of a lemon
  • 1 teaspoon salt
  • 1 heaped teaspoon ground black pepper

Instructions
 

  • Place the salmon on a non stick oven tray.
  • Use a processor to make breadcrumbs with the sliced bread.
  • Add in the zest, juice, seasoning and oil and use to coat the salmon.
  • Bake in the oven for about 15 minutes.

Notes

For a chilli and lime crust omit the pepper and lemon and replace with 1 heaped teaspoon of chilli flakes or, if you like it hot, 1 tbsp. Stir in the zest and juice of two limes.
