Compressed Apple Terrine

Classic French compressed apple dessert served cold in slices and flavoured with ginger, nutmeg and cinnamon.

Equipment

  • Non stick loaf tin - 800 ml or 1.5 pints.
  • Apple corer - optional
  • sharp knife
  • Large bowl
  • Foil

Ingredients
  

  • 4 apples
  • 4 tablespoon honey
  • 2 tablespoon brandy
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ½ teaspoon nutmeg
  • 2 tablespoon lemon juice

Instructions
 

  • Put the lemon juice in a bowl. Peel, core and slice the apples as thinly as possible and place in the lemon juice.
  • Add the honey, brandy and spices to the apples and stir to fully coat.
  • Place a layer of apples in the bottom of the tin. Keep layering until all the apple is used up.
  • Cover the dish with foil and bake in a preheated oven at 180 C / 350 F / 160 FAN / Gas 4. for 1 hour and 30 minutes.
  • Remove the foil and cook for a further 30 minutes.
  • Allow to cool with the foil loosely placed on top.
  • Cover the top with foil and place a couple of tins on top to compress the apples.
  • Leave in the refrigerator overnight before turning out and serving.
