Honey Glazed Carrots with Mustard

These honey and mustard glazed carrots are so simple to make and take the same amount of time as roast potatoes for easy cooking.

  • 500 g carrots approximately 6 large carrots
  • 2 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoon honey clear or runny
  • 1 tablespoon wholegrain mustard


  • Peel the carrots and chop off the ends.
  • Cut the carrots in about 1 inch or 2 centimetre chunks on the angle.
  • Put the oil and butter into a roasting dish and put in the oven to preheat to 180C/350F/160FAN/Gas4.
  • Add the carrots and turn them over in the oil so that they are thoroughly coated then roast for 20 minutes.
  • Mix the honey and mustard together.
  • Remove the carrots from the oven and stir in the honey and mustard then return to the oven for another 20 minutes.
