Cut the carrots in about 1 inch or 2 centimetre chunks on the angle.
Put the oil and butter into a roasting dish and put in the oven to preheat to 180C/350F/160FAN/Gas4.
Add the carrots and turn them over in the oil so that they are thoroughly coated then roast for 20 minutes.
Mix the honey and mustard together.
Remove the carrots from the oven and stir in the honey and mustard then return to the oven for another 20 minutes.
