The potatoes will definitely go soggy within hours so they will have to be reheated in a hot oven or crisped in an airfryer or deep fat fryer for a reheat.
For a dinner party I would just chop them in advance and leave in water in the fridge until ready to cook them.

I love potatoes rissolé and would like to make them in advance to make things easier for myself when having a dinner party. You suggest that they can be prepared in advance and stored in the fridge for up to 5 days. I'm worried that they would go a bit soggy though.
