Ingredients
  1. 5 boneless chicken thighs
  2. 2 lemons, each cut into eight
For the marinade
  1. juice of one lemon
  2. 2 tbsp chopped fresh rosemary
  3. 1 tsp sea salt
  4. 1tsp ground black pepper
  5. 1 tbsp vegetable oil
Instructions
  1. Cut each chicken thigh into four.
  2. Make the marinade by combining all the ingredients together.
  3. Pour the marinade over the chicken and refrigerate for 30 minutes.
  4. Thread the chicken onto skewers alternately with the lemon pieces.
  5. Grill or barbecue over a medium heat for about 7 minutes each side.
Notes
  1. Remove the skin to reduce the calories.

    1. Thank you. I’ve been trying to wean myself off tarragon recently as I seem to be addicted to the stuff. The hot lemon is definitely a bit of magic.
